In 2020, we have added an organic herd of Dexter cattle to our farm. Dexters are intrepid grazers, so they can stay outside year round and finish well on the grass, hedgerows and woodland of our farm. They're here to help us manage the land to conserve and maximise our biodiversity. The by-product of our environmental conservation is the occasional beef box.
Grown slowly on rich pastures with a wide variety of grasses, herbs, wildflowers and protein rich legumes, such as the trefoil family, and with access to hedgerows, woodland and streambanks so that they can self-medicate, the result is a complex and flavoursome meat, which also enriches our environment.
We have three boxes available, fresh for Christmas 2020 to pick up alongside your Organic Turkey. Or Frozen throughout 2021. All our beef is certified organic by the Soil Association, and is dry-aged for a couple of weeks to enhance their flavour and improve texture. The weights below are approximate and refer to per steak, joint or pack of mince.
